Is anyone having problems with staff taking used oil and selling it? Does anyone have any ideas on preventing this type of theft?

I think that people steal it because for many years used cooking oil has been treated as a waste product. Restaurateurs were happy that somebody took it away, for free. So they didn't bother who took it.

I think a good way to avoid theft is start treating it as a valuable commodity. Communicate to your personal that the used cooking oil is now being sold to a client and store it protected, in a decent barrel, closed after the used cooking oil is poored in.
